Pisces was and is co-ordinated by a professional ecologist and a London-based Japanese restauranteur, and from the start it has focused on individual coastal day boats that we have ourselves surveyed and which have minimal discards, whose other environmental impacts are relatively low, and who can deliver their fish to restaurants on the same day as capture or next morning. The fish have to be of exceptional, sashimi grade, quality. We insist on photographing and (now) videoing at sea, and putting the results up here for everyone to see for themselves.
