Objectives

Keeping it simple

We do a lot of work behind the scenes of Pisces-RFR, but we know that for the chef or restauranteur this needs to be simple to implement.

If you are interested in participating, contact us. We would then explore with you your current fish portfolio and suggest possible alternatives, based on the local seasonality charts that we have, so that you can plan potential menus through the year.

Once up and running, the idea is that chefs will source from up to three specific boats from different geographic locations (for variety of catch and continuity of supply - weather!) along with perhaps 5-10 other restaurants who are not competing for the same types of fish. This aim is to build a long term relationship with ‘your fishermen’, with every opportunity to get out on the boats and know about your sources.

When it comes to chefs getting fish, what has worked well in the pilots is that the fishers simply let the chefs know what they have caught that day, and the chefs place their orders. Once chefs and fishers get to know each other, less frequent contact may work fine.

We will help chefs set up delivery mechanism, provide restaurants with photos and other publicity material, and carry on searching for new and better fisheries. We can provide restaurants with updates their fish portfolio, so that they can monitor their progress.

If you want to join in with events such as fish tasting for the quality assessments, you will be very welcome, but we also recognise that for many chefs simply changing supply routes will be as much as they can handle in a busy schedule.../../../../Contact_Pisces_Responsible_Fish_Restaurants.html11_Restaurant_%E2%80%98Fish_Portfolios%E2%80%99.htmlshapeimage_6_link_0shapeimage_6_link_1
